Hands down my favorite soup ever. I make it in a crock pot with extra tomato and I am liberal with the white wine. Fantastic.

My husband and I loved this soup. Very hearty -- great single course meal. Will make again many times. I didn't add celery (not a flavor I like) and it was still terrificd!

Additions:

 
4 cups water
2 tbsp olive oil
1 1/2 cups onions, chopped
1 1/2 cups celery, chopped
3 tsp garlic, minced
2 14.5oz cans chicken broth
1/2 cup white wine
1 14.5oz can diced tomatoes
2-3 boneless, skinless chicken breast (approx 1 lb)
 

Cooking Directions:

  • In a large stock pot, saute vegetables & garlic in olive oil.
  • Add water, broth, wine, beans, tomatoes, chicken and spice packet contents.
  • Bring to a boil, reduce heat and simmer, covered, for 2 1/2 to 3 hours or until beans are tender.
  • Just before serving, shred or cut chicken pieces. Chicken will fall apart easily in the soup.
  • Salt and pepper to taste.

Ingredients:

Beans, Spices and Red Bell Peppers.
