Lysander's Cajun Red Bean Soup

From Lysander's, a delicious, traditional cajun red bean soup.

4 1/2 cups water
1 green pepper, chopped
3/4 cup onion, chopped
1/2 cup celery, chopped
1 to 2 cups tomatoes, chopped
1/8 to 1/3 cup vegetable oil or ham hock
 

Cooking Directions:

  • Pick through and wash beans
  • Add 4 1/2 cups water, boil 1 minute, turn off heat, let stand 1 hour.
  • Add onion and garlic and boil gently 1 hour or until beans are soft. Stir occasionally and add water as desired.
  • Add ingredients and season (to taste).
  • Cook 1 hour or until done and desired thickness is obtained.
  • Crock pot directions included on package.

Small Red Beans or Red Kidney Beans, Salt, Garlic Powder, Onion Powder, Ground Bay Leaves, Red Pepper, Spices and Corn Oil.

THIS IS BETTER SOUP THAN YOU CAN GET IN LA. BUT I WOULD SOAK THEM OVERNITE, DRAIN REFILL W/ 1/2WATER &1/2 CHICK. STOCK. IT IS "NOT" TO SALTY AND I HAVE NOT USED A SALT SHAKER IN 34 YEARS.
