Lysander's Minestrone Soup

From Lysander's, a delicious, traditional minestrone soup.

6 cups water
1 medium onion, chopped
2 cups tomatoes, chopped (fresh or canned)
1/4 cup olive oil
1/2 cup macaroni
2 cups chopped vegetables (your choice: zucchini, potatoes, eggplant, green beans, or combination of)
 

Cooking Directions:

  • Pick through and wash beans.
  • Add 6 cups water, boil 1 minute, turn off heat, let stand 1 hour.
  • Boil gently 1 hour or until beans are soft. Stir occasionally and add water as desired.
  • Add ingredients (except macaroni) and season to taste..
  • Cook 20 minutes
  • Add macaroni, cook 20 minutes or until done.
  • Crock pot directions included on package.

Ingredients:

Beans (Great Northern, Baby Lima, Small Red, Red Kidney), Green Split Peas, Salt, Garlic Powder, Onion Powder, Black Pepper, Spices and Corn Oil.

I added all the veggies recommended except eggplant I used yukon gold potatoes. I always wanted to make my own minestrone soup and I figured this was a good start...just curious though what are the "Spices" and do you have to use corn oil? I heard corn oil was fattening and unless it's organic it's GMO. Thank you and happy soup eating..
