Buckeye Beans Chicken & Thyme Soup

A crock-a-deelicous chicken soup - just add water, chicken and onion.

1 large onion, chopped
2 whole chicken breasts, skinned (1.5-2 lbs total)
10 cups water (if you use boneless, skinless chicken breasts, substitute 5 cups chicken broth (no salt added) for 5 cups water.
 

Cooking Directions:

  • Rinse rice, barley, peas and lentils and sort out any foriegn material.  
  • Place in a kettle with seasoning packet contents, onion, raw chicken breasts and water.
  • Bring to a boil, stir, cover and simmer for 1 hour.
  • Stir occasionally to avoid scorching.
  • After and hour, remove cicken breasts, cool slightly, bone and return meat pieces to soup.
  • Heat through, serve and enjoy.
  • Soup can be thinned with water if too thick.
If you want to 'doodle' around with this soup, feel free to add 1/2 cup of any or all of the following at the same time as the onion: chopped celery, carrots, green pepper, fresh peas, broccoli or whatever need to be used in the refrigerator.

I love this soup. Its is so comforting even on a hot day in July! I add a cup of celery, carrot & an onion, sauteed & Wolfgang Pucks roasted chicken broth & its awesome. It makes a big pot that I share with my family & neighbors. If you remember Aunt Patsy's Chicken & Thyme, this is a great substitute. Soupsonline is a fantastic website. This soup is so easy. It's gentle on the spices and so very chicken-y. My whole family was sick a couple of weeks ago and I made a pot of this. It made us feel like eating again.

Great soup! Added 7 chopped stalks of celery and 3 TBSP Better Than Boullion chicken base to the stock while boiling a WHOLE chicken. Removed chicken to shred and discarded celery after 1 hr of low boiling, then proceded with the recipe on the box. Added can of tomatoes with chicken right before serving. Topped with fresh guacomole and bread right out of the oven. Family went nuts for it!

This soup was excellent. It is easy to make, the taste is great, and it makes a nice amount. We (two of us) were able to eat it for a couple of days and then freeze a few individual portions.
