Slow Cooker Gourmet Memphis Blues Pork Chop Dinner

If you love great BBQ flavor, then this is the mix for you. Combine in your slow cooker with pork, tomatoes and sweet potatoes and then sit back all day letting the wonderful smells of Memphis BBQ fill your house. A wonderful meal and then some - plan on leftovers!

Additions:
1 1/4 pounds of boneless pork chops
3 cups of cubed sweet potato
14 oz can of diced tomatos with green chilies
1/2 cup of spice BBQ sauce
5 cups of water
Cooking Directions:

Sort through and rinse the beans. Spread beans across the bottom of your slow cooker.

Layer the pork evenly over the beans.

Layer the sweet potatoes evenly over the pork.

Sprinkle contents of spice packet (included) evenly over the top of the layered ingredients.

Combine tomatoes, BBQ sauce, and water in a small bowl. pour over the layered ingredients. DO NOT STIR.

Place lid securely on your slow cooker.

Turn on your slow cooker and cook on high for 4.5-5 hours or on low for 8-9 hours.

Turn off slow cooker. Add salt and adjust seasonings and water to your taste. Serves 6-7
Vegetarian version: omit adding meats. Instead, at step 3, add 1/2 cup of diced potatoes. Then, at step 8, add 1/2 cup sweet corn.
Serving suggestion: Spoon pork chop dinner into bowls. Sprinkle with crumbled corn bread. Serve with steamed green beans or broccoli and home made pecan pie for desert. Enjoy!
