Slow Cooker Gourmet Santa Fe Chipotle Southwest Bean Bake

Santa Fe Chipotle Southwest Bean Bake is a north of the border must have! Combining sweet corn, tomatoes and yellow squash to Southwestern spices creates a casserole style dinner begging for more salsa and cheddar cheese. Serves 6-7.

Additions:
1 small yellow squash, quarted and chopped
12 oz stew beef, cut into 3/4" pieces
8 oz can of tomato sauce
4 cups of water
3/4 cup of sweet corn
1 tsp of salt, or to taste
Cooking Directions:

Sort through and rinse the beans. Spread beans across the bottom of your slow cooker.

Layer squash evenly over the beans. Layer the beef evenly over the squash

Pour the tomato sauce evenly over the top of the beef

Sprinkle contents of spice packet (included) evenly over the top of the layered ingredients.

Pour the water over everything. DO NOT STIR.

Place lid securely on your slow cooker.

Turn on your slow cooker. Cook this wonderful dinner on high for 4.5-5 hours or on low for 8-9 hours.

15 minutes before serving, stir in corn and salt. replace lid and cook on low to complete. Serves 6-7
Vegetarian version: In place of the beef, add 3/4 pound of firm water packed tofu, which has been frozen, thawed, and crumblend in a colander. Delicious.
Serving suggestion: Top casserole with shredded Chedder-Jack cheese, sour cream, and your favorite spicy salsa. Serve with soft flour tortillas, or your favorite corn chips and fresh brewed iced tea. Enjoy!
