This is a very easy and tasty country corn chowder. This quick and wonderful creation makes a quart of soup that normally serves about two. You can even make this soup a meal by adding cubed ham or chicken. Serve it with a fresh warm bread and a tossed salad. For a little variety, add swiss or cheddar cheese for a little zing!

Additions:2 1/2 cups low sodium chicken broth
1 10 oz. pkg. frozen creamed corn (defrosted)
Cooking Directions:In a medium saucepan, whisk together the soup mix, creamed corn and chicken broth. Bring mixture to a boil. Reduce heat and simmer 10 minutes or until the potatoes and corn are cooked through. Garnish with crushed tortilla chips, chopped cilantro or crumbled bacon. Salt to taste. Makes approximately one quart of soup.
