Delicae Gourmet Santa Fe Chicken with Black Beans

The mildly spicy flavor of this dinner is a delicious reminder of the southwest.

1 14.5 oz can of diced tomatoes
1 15 oz can of low sodium tomato sauce
1 16 oz bag of frozen corn
4 lbs of skinless chicken breasts or thighs
4 cups of water or chicken broth
 

Cooking Directions:

 
Place uncooked chicken in the bottom of the slow cooker.  Rinse and sort the beans and layer over the chicken.  Layer the contents of the vegetable and spice packets over the barley.  Top evenly with diced tomatoes and tomato sauce.  Slowly pour the water or chicken broth over the ingredients. Do not stir.  Cover and cook on high for 5 1/2 to 6 1/2 hours or low for 8 1/2 to 9 1/2 hours.  Do not lift the lid while cooking.  Add corn 1/2 an hour before serving.  Salt to taste.
 

Serving Suggestions:

 
Before serving add 2 to 4 1/2 oz cans of chopped green chilies.  Add 1 cup diced fire roasted red peppers.  Add hot sauce or jalapenos for more heat.  Top with sour cream and grated cheese.  Top with chopped fresh cilantro and lime.  Serve over rice with warm tortillas.

Without the chillies and other spices Ijust used low fat grated cheese and low fat sour cream it is fantastic. In my crockpot I had it on low for 5 hours and that was enough.Chicken might get tough.It is a beauty of a receipe.

This was not at all mildly spicey, it was very hot. I fixed a nice,easy soup for company and no one could swallow the first bite so onto making a new dinner. Fortunately, we tasted it before the serving hour. What a waste of money for chicken and the other veggies I added.

This was so easy to prepare - only took a few minutes to throw everything into the crock pot. Added green chiles and cilantro at the end and topped with sour cream and cheese. Delicious!!
