Delicae Gourmet Mediterranean Lamb Shanks

Tender lamb cooked with tasty beans and vegetables brings the flavor of the Mediterranean to your kitchen.

2 14.5 oz can of diced tomatoes
6 3/4 lb lamb shanks
1 cup red wine (optional)
4 cups of water or chicken broth
 

Cooking Directions:

 
Place lamb shanks in the bottom of the slow cooker.  Rinse and sort the beans and layer them over the lamb shanks.  Layer the contents of the vegetable and spice packets over the beans.  Top evenly with diced tomatoes.  Slowly pour the water or broth and wine over the ingredients.  Do not stir.  Cover and cook on high for 4 1/2 to 5 1/2 hours or low for 8 to 9 hours.  When ready to serve salt to taste.
 

Serving Suggestions:

 
Top with a combination of chopped garlic, parsley, black olives and capers.  Serve with crusty Italian bread and a green salad.  Garnish with rosemary sprigs and lemon wedges.
