The Smiling Armadillo Southwestern White Chili is an aromatice, milkly flavored chili with a definite southwest attitude.

Awesome soup! I add roasted chicken that I've cooked, with salt and pepper (shred the meat), and black beans (a cup or two). Easy to make, delicious served with tortilla chips!

this soup is amazing!! I picked it up at a closeout store, tried it and had to look it up online and order for the winter season... You must try it... add salt and make some jiffy bread.. awesome!!

Additions:

 
2 tbsp olive oil
2 cups chopped onion
3 - 14 1/2 oz cans chicken broth
3lbs white chicken
1 - 4 oz can chopped green chiles
2 - 14 1/2 oz cans white kidney beans
1 tsp salt
1/4 tsp black pepper
 

Cooking Directions:

  • Saute olive oil and onion for 7-10 minutes.  Add chicken, salt and pepper
  • Add Southwestern White Chili mix and the green chiles and cook 1 minute.
  • Add the chicken broth.  Bring to a boil and reduce heat to simmer.
  • Simmer for 30 minutes.  Add the beans and simmer for an additional 30 minutes.

Variations/Serving Suggestions:

  • Serve over rice, cooked spaghetti or buttered noodles.
  • Top with jack and cheddar cheese, cilantro, chopped green onions, diced tomato, crisp tortilla strips, sour cream or southwestern marinated cucumbers.
