7 cups water
1 - 14.5 oz can diced tomatoes
 

Cooking Directions:

 
Bring 8 cups of water to a rolling boil. Whisk in soup mix and diced tomatoes. Reduce heat to Medium and simmer uncovered for 20 minutes, stirring occasionally. Be careful not to overcook.
 

Recipe Variations:

 
Tortilla Lime Chicken Roll-Ups

In a large pot place 2 lbs cooked, shredded chicken.  In another pot, boil 4 cups of water and whisk in dry soup mix, 1 - 6oz can of tomato paste, 1/2 tsp hot sauce and 1/4 cup fresh lime juice.  Simmer for 20 minutes, stirring often.  Set aside to cool.  Ladle cooled soup mixtureinto blender and puree.  Pour into pot of shredded chicken.  Repeat puree with remaining 1/2 of cooked soup mixture.  Cover, stir and heat.  Serve with corn tortillas.

Everyone in my family loves this soup, even my picky 2 year old. Great when you need a quick dinner. I add canned tomatoes, corn, black beans and canned chicken. Top it off with cheese, sour cream and corn chips. So yummy

Having had tried several tortilla soups over time, I was suprised when this was cooking because it almost had a smokey, chipotle-like aroma. So I was a bit worried about how it would taste. Turns out is has a terrific flavor - a smokey flavor much more subtle than the aroma - truly a wonderful, unique take on tortilla soup!

This was absolutely one of the best tortilla soups I've eaten. I added a little cheddar cheese and tortilla chips and it was wonderful.

I tried the variation and made chicken wraps. They were delicious! I used jalapeno and cheddar seasoned wraps and garnished with lettuce, cheese and sour cream.
