Cooke Tavern Wagoner's White Bean Chili

Some folks call this "chicken chili"! It has a southwestern flavor with no tomatoes or red meat. A great way to use leftover chicken or turkey! The chili is medium spicy. Garnish this chili with a generous scoop of grated cheese and you will have a wonderful tasty southwestern style treat. You can also cook this mixture down in a crockpot, add some cheddar cheese and serve with tortilla chips as a warm dip.

1 1/2 cups water
1 - 14.5 oz cans chicken broth
1 lb chicken breast cubed
3/4 tsp salt
1 1/2 cups grated cheddar cheese
 

Cooking Directions:

 
Rinse beans, place in large pot and cover with 2" of water.  Bring to a boil for 10 minutes.  Remove from heat, soak beans for 1 hour.  Drain beans, add soup seasoning packet, cubed chicken, chicken broth, water and salt.  Bring mixture to a boil.  Reduce heat, cover and simmer for 1 1/2 hours or until beans are tender.  Top with grated cheese.
