Cooke Tavern Autumn Harvest Pumpkin Lentil Soup

This luscious soup will make a grand first course for any fall family feast! This unique blend of red and yellow lentils, peas, brown and wild rice, along with our creative spice mix is topped off with a can of 100% Pumpkin Puree. Serve this festive soup in a hollowed out Pumpkin shell to impress your guests with your culinary expertise.

Additions:
2 cups water
2 peeled and sliced carrots
1 cup pureed pumpkin
1/3 cup red wine
2 tbsp olive oil
3/4 tsp salt
Cooking Directions:
Rinse lentils and combine them with seasoning packet, carrots, chicken broth and water. Bring to a boil and simmer for 1 hour. Add pumpkin, wine, olive oil and salt. Simmer for 1/2 hour.
Ingredients:
Red lentils, brown & wild rice, green & yellow peas, garlic, onion, celery, dried vegetables, herbs and spices.
