Cooke Tavern Penns Pike Potato Leek Soup

Penns Pike Potato Leek is a creamy potato soup flavored with leeks-good either hot or chilled. Add bits of ham & bacon and top with your choice of grated cheese for different versions to suit your family's taste.

2 - 14.5 oz cans chicken broth
4 cup potatoes, peeled and diced
3 cups half & half (or milk)
1 tsp salt
 

Cooking Directions:

Add soup mix and potatoes to chicken broth.  Cover and bring to a boil.  Reduce heat and simmer until potatoes are tender (30 minutes).  Lightly mash potatoes.  Stir in half & half and salt.  Turn off the heat and let soup rest for 10 minutes.  Do not boil.

Variations/Additions:

Add chicken, turkey or seafood for a great meal.  Serve in a hollowed out round loaf of bread. Scoop out the center and spoon in the soup.  A nice compliment to corn bread.

I'm a big fan of Cooke Tavern soups, but this was almost too onion-y to each (on the spicy side).
