Canterbury Naturals Hearty Black Bean & Pasta Soup

12 cups water
2 (14.5 oz.) cans beef broth
1 (14.5 oz) can diced tomatoes
1(8 oz.) can tomato sauce
1/2 lb kielbasa, diced
salt to taste (optional)
 

Cooking Directions:

 
Thoroughly rinse and clean beans. In a large soup kettle combine beans and 6 cups of water. Bring to a boil and cook for 2 minutes. Remove from heat and let stand for 1 hour, covered. Drain and rinse beans. Add 6 cups of water back to beans and bring to a boil, reduce heat and simmer to 1 hour. Drain water and add vegetable packet. spice packet, pasta, beef broth, tomatoes, tomato sauce and kielbasa. Bring to boil, reduce heat and simmer for 20 minutes. If desired, salt to taste. Makes approx. 9-1 cup servings.

Black Beans, Rainbow Pasta Shells (Semolina, Tomato Solids, Dried Spinach, Enriched with Iron [Ferrous Sulfate], and B Vitamins [Niacin, Thiamine Mononitrate, Riboflavin, Folic Acid]), Dehydrated Onion, Soup Packet: (Garlic, Parsley, Bay Leaves, Cilantro, Celery Seed, Cumin, coriander), Dehydrated Bell Pepper, Dehydrated Green Bell Pepper.

I made this for dinner on New Year's Day, and have been looking for it ever since. After a New Year's Eve celebration,l it was the perfect dinner with a loaf of crisp French bread and a salad. Delicious!

I didn't have kielbasa, so I sliced up a couple of brats. Turned out great - wonderful flavor and as the name of the soup implies, very hearty - this soup was thick!
