Leonard Mountain 3 Amigos Enchilada Stew
One of their best sellers, Leonard Mountain 3 Amigos Enchilada Stew took 1st prize at the prestigious Atlanta Gourmet Food Show. So similar to a tortilla soup, but in this stew Leonard Mountain uses brown beans in place of the black beans and adds potato flakes to the mix so that it thickens up a bit and becomes more like a stew. We like it with chicken or hamburger.

Additions: 6 cups water
Cooking Directions:

Add contents of both packages to water.

Bring to boil, stirring to mix.

Reduce heat and simmer 20-30 minutes.

You can add chicken to this mix as well as tomatoes or cheese (or all three).

Serve with tortilla chips and garnish with sour cream or guacamole.

Very good mix, but way too strong if you use the entire seasoning packet. On the first batch I did the entire thing and couldn't eat it. On the second batch, I cut the seasoning in half and it was really good. I did have a long commute and started it in a crock pot in the morning and it was perfect when set at 160 degrees when I got home 10 hours later. Any hotter and the dried potatoes would have been mush.
