Alessi Zuppa Toscana Tuscan White Bean Soup

Cooking Directions:

Bring water to a boil in a 3 quart pot.

Add soup mix and stir for one minute. Stir frequently to avoid possible overflow.

Reduce heat to medium and cook uncovered for 12 minutes. Soup should bubble during cooking. Stir occasionally.

Remove from heat. For authentic Italian taste, stir in 1 tablespoon extra virgin olive oil and sprinkle with grated cheese (optional). Serve and enjoy.

I prepared this soup according to the directions and it is a thin soup with not much substance. See the picture on the front of this package? You will not get that soup. There are almost nothing substantial in this mix. If you want white beans,ditalini pasta and vegetables, yes, they are there in the most minimal amounts.

I make this often and brought it in the past to work and had coworkers beg me to try it!!! I add additional peas and I add corn and an apple chicken Chardonnay sausage, also an asiago cheese at the end with some hot sauce. Everyone says it is the combination that makes it perfect. I agree . I always make a double batch and portion it out in containers and freeze

I cooked it 20 minutes instead of 12 to get the green peas more tender. This is one of the best soups I have made from packet mix. Nice balance of flavors and dried vegetables. Excellent with fresh bread.
