Simply Organic Red Enchilada Simmer Sauce
Cooking Directions:
8 corn tortillas8 ounces shredded Monterey Jack or Cheddar cheese
1. Preheat oven to 400º. Lightly grease a 3 quart baking dish.
2. While oven is preheating, wrap tortillas in foil and warm in oven for 5 minutes.
3. To assemble enchiladas, place 2 tbsp cheese into each warm tortilla. Roll each tortilla and place seam side down in baking dish.
4. cover tortillas with simmer sauce. Sprinkle with remaining cheese.
5. Cover with foil and bake for 12 minutes or until heated through. Remove foil and bake 5 minutes more. Serve with your favorite toppings.
Suggestions:
Substitute shredded cooked chicken or beef for the cheese in the filling.
