INGREDIENTS:
1 tbsp olive oil
1 cup/1 small onion, diced
1 cup/1 small red pepper, diced
1 packet Southwest Fiesta blend
1 1/2 lbs. chicken breast boneless, skinless
1 x 14 oz. can black beans
1 x 14 oz. can diced tomatoes
2 tbsp tomato paste
1 chipote chili in adobo chopped, optional
4 cups/32 fl.oz. chicken broth
1 cup/8 oz. water

Slow Cooker:

1. Heat oil in skillet on medium; saute the onion & pepper for 2 minutes.
2. transfer mixture to slow cooker.
3. Add the chicken & sprinkle on the southwestern fiesta blend.
4. Add the black beans, tomatoes, tomato paste, chipotle chili, chicken broth & water.
5. Stir, cover & cook on low: 6 hours or high: 3 hours 
6. Remove the chicken & shred using 2 forks; return chicken to slow cooker & serve. 

Pressure Cooker:

1. Heat oil on sauté until hot; cook onion & red pepper for 2 minutes. 
2. Turn saute function off; add the chicken & sprinkle on the Southwest Fiesta blend. 
3. Stir in black beans, tomatoes,tomato paste, chipotle chili, chicken broth & water.
4. Secure pressure cooker lid; set pressure valve to sealing.
5. Cook on manual/pressure cook for 6 minutes; turn the dial to venting to quick pressure release after cooking.
6. Remove the chicken & shred using 2 forks;return chicken to pressure cooker & serve.
